I love to cook, I'm a foodie. My family and I love to dine out, or in as long as we are together. I love to get in my kitchen and create. However, in January 2017, I made a drastic life style change because of health issues. It was in the moment I found myself eating dirt cookies. Yes, I said it dirt cookies AKA gluten-free cookies. (Whoever said gluten-free cookies are good, meet me at the playground at 3 p.m.) The hardest part of this gluten free, dairy free, sugar free, no fried food, no chocolate, nothing tasty ever- lifestyle was that SWEETS, desserts are my weakness. OMG I love chocolate but chocolate doesn't love me. Oh yeah did I mention no red meat either, ugh. I can't have anything FUN! I created this foodie corner to show there are some gluten-free desserts, all that stuff free foods that are desirable. In Foodie Corner we are going to "Eat to Live", get creative with great food ideas that don't taste like dirt. It's time to come over to the Darkside!
Coconut Flour -Carrot Cake
Ingredients
CAKE
1 cup sifted coconut flour
1 teaspoon baking soda
1 tablespoon ground cinnamon
2 teaspoons kosher salt
4 cup egg substitute
5 carrots, peeled and shredded
3/4 cup maple syrup
1 tablespoon pure vanilla extract
1 cup coconut oil
FROSTING

8 ounces Vegan cream cheese
1/4 cup unsalted vegan butter
1 cup Organic coconut confectioners’ sugar
1 cup finely chopped walnut
Step 1 Make the Cake
Preheat the oven to 325º. In a small mixing bowl, whisk together the coconut flour, baking soda, cinnamon and salt. Set aside.
Step 2 Make the Cake
In a large mixing bowl or stand mixer, blend the eggs, carrots, maple syrup, vanilla and coconut oil. Add the dry ingredients to the wet and thoroughly mix. Pour the batter into two greased 9-by-9-inch cake pans lined with parchment paper. Bake for 35 minutes, or until a toothpick pulled from the center comes out clean. Remove the pans from the oven and let cool for 10 minutes, then transfer to a wire rack to cool completely.
Step 3 Meanwhile, Make the Frosting
In a large bowl or stand mixer, whip together the cream cheese, butter and confectioners’ sugar until smooth.
Step 4 Meanwhile, Make the Frosting
Once the cakes are completely cool, frost the cake with cream cheese frosting, garnish with walnuts and serve.
